Healthy Recipe: No Ground Beef In My Beef Stroganoff

This is a great main dish that the whole family will love. Even my picky 4 year old gave it a thumbs up! A few of the ingredients have been changed from the classic stroganoff recipe to make this into healthier version of it, and it's GREAT. One thing that has changed is the use of fat free plain yogurt instead of sour cream. You can use this as a replacement in almost anything that calls for sour cream, you can't tell the difference! I used Oikos fat free plain Greek yogurt myself. I also used whole grain noodles, free of egg yolk. This recipe also replaces canned mushroom soup with instant onion-mushroom soup mix. These changes took the normal fat content of 34g down to only 9g, the cholesterol from 112mg down to 69, and it also cut the calories in half! Enjoy! Ingredients:

Sauce:

1 cup evaporated skim milk

1 tbs cornstarch

1 envelope instant onion-mushroom soup/ dip mix
Beef mixture:

12 oz beef sirloin steak, trimmed of all visible fat and cut into thin bite size strips

1/2 medium onion, sliced and separated into rings

1 clove garlic, minced

1 1/2 cups sliced fresh mushrooms

1 (8oz) container fat free plain yogurt

2 cups hot cooked noodles

To make the sauce:

In a medium saucepan, use a wire whisk to stir together the milk and cornstarch until smooth. Then stir in the soup mix. Bring to a boil over medium heat, stirring constantly. Remove from the heat and cover to keep warm.
To make the beef mixture:

Lightly spray an unheated large skillet with non stick spray. Add the beef, onions and garlic. Cook and stir over medium- high heat for 2 minutes. Add the mushrooms. Cook and stir about 1 minute more, or until mushrooms and onions are tender. Reduce heat to low.

Stir the sauce mixture into the beef mixture. Then stir in the yogurt. Cook and stir just until heated through ( do not overheat because the yogurt will curdle). Serve over hot noodles.

Makes 4 servings, serve with your favorite sides and enjoy.
